Today marks my first day (recently at least) of unemployment. I'm taking some time to figure out a plan for the rest of our time here in O-Town.
Even though the couch was calling to me today, I managed to get quite a bit of my To-Do list tackled which was my goal for today.
I cleaned most of the apartment, did laundry, shredded about 200 pages of paper and did dishes! It's not a pigsty around here anymore!
My big goal for today was to bake Jason some treats. I've become rather obsessed with Pintrest, and have been collecting all kinds of delicious recipes and wanted to make something new and exciting. I found a recipe for cookies with Avocado instead of butter and really wanted to give it a try.
Off I marched to the grocery store, bought avocados (and chocolate chips!) and came home excited to substitute it into Banana Bread & Cookies. I neglected to check the avocados to see if they were ripe though and ended up with very hard avocados not ready to be used in baking. So back to butter & shortening it was!

I still managed to create pretty delicious cookies and banana bread (if I do say so myself!) Once the avocados ripen I will give it another try and let you know how they turn out!
The cooking fiesta doesn't end there though! I also finally made some tofu stirfry. I used to make it at work last year, but have never built up the courage to make it for my own belly.
I cut up lots of fresh veggies and then sliced the tofu small (although when I do it again I think I'll go even smaller). After some internet investigation I decided to cook my tofu with oil for about 10 minutes and then take it out of the pan and cook the vegetables before adding the tofu again.

Once the tofu was back in the pan I sauced it and poured it over some rice. It was pretty easy for sure, and compared to the price of meat definitely worth it.
As I alluded to above in addition to cleaning today, I also managed to get outside and stretch my legs! I walked to the store and then we went for another stroll along the parkway when Jay came home- there are so many geese!
I think it's time to get a little less practical with my goals, I can feel my motivation waning! I'll still try and go for a walk or something but I think tomorrow my goal will be something fun. I haven't committed to an idea yet so you'll just have to trust me!

One final thought: GO KINGS GO! I know, I know I'm a SENS fan, but once they fell out of the playoffs I decided I'd like to see the KINGS win, mostly because I'd completely forgot they had a team and now they are kicking butt!

Use unsweetened apple sauce instead of butter when you bake! It's cheaper than avocado :)
