Our first weekend back in Ontario was a long one thanks to the Family Day holiday! It was a fabulous weekend, we just kicked back and relaxed for the most part and watched movies. We did venture out for the last weekend of Winterlude but it's turned quite spring-like here in Ottawa so the Rideau Canal was closed to skating and the ice sculptures were a little melted.
Over the weekend I did some cooking and baking. I created guacamole & pita chips that were delicious. I documented it so I can share with you.
Guacamole
My guacamole recipe isn't particularly strict I got the basics of it from the after-school program last year and then I kind of amend it a little each time I make it.
2-3 medium sized ripe avocadoes
Cilantro to taste (Fresh or Frozen will work)
Diced onion to taste
1 small tomato, seeded & diced
Freshly squeezed lemon or lime juice
Start by cutting the avocado in half (careful of the pit in the centre), I sliced gently through the skin and flesh stopping when I hit the pit and spinning the two halves apart. The fleshy part (I can't think of a better word for it) should just pop out of the skin fairly easy but you can scoop it out if necessary.
I then cut the avocado into smaller pieces and mash with a potato masher until it's broken up. Then mix in diced onion, tomato & cilantro and squeeze lemon or lime juice over top. I usually mix the ingrediants together a bit and taste it a couple of times to check how it's tasting. Once you like how it tastes just make sure it's all well mixed.
Serve with tortilla chips, pita bread or pita chips.

Olive Oil
Spices, to taste.
Separate each pita in half (it should just pull apart). Cut the pitas into triangles and toss with olive oil and any seasoning you like. Place on a pan lined with tinfoil and bake at 400F for 5-10 minutes. Watch closely so they don't burn and cook until browned and crispy. They are delicious!

Chocolate Chip Cookie Cake
I also created this cake, something I've been wanting to make for a while now. I'll be honest with you, I didn't bake the dough from scratch, mostly because we didn't have all the ingrediants and I was feeling lazy. So I used a packaged mix, but you could certainly do this with any chocolate chip cookie mix.
Pick a pan large enough for the amount of dough you will make [I used an 8x8 pan for the whole package of mix]
Grease the pan so the cookies don't stick
Mix up the dough according to directions
Put the dough into the pan and press down gently so the bottom is filled
Bake until golden brown and the edges are crispy. I watched closely to make sure it didn't overcook.

And there you have it, a weekend of food creation :) I know none of these are particularly complicated recipes so have fun with them and modify them as you see fit to make them your own!
